Judy Eberspaecher, author of Totally Scallops-- the first single-subject cookbook on the creamy sweet bivalve-- grew up in Nova Scotia, where scallops were a common protein at the supper table. "We had two fishermen a week come to the house, so we ate our share of fish," she says. Over the past 26 years, Eberspaecher has amassed a terrific collection of recipes, her intention being to write a little scallop book for friends and family: "But the project just grew and grew," she says. There are almost 90 scallop recipes in her new globe-trotting cookbook.
